Syrian Burghul and Yogurt Appetizer - Kishkeh - 13g Carbs, 3g Fiber

1/2 cup bulghur
4 tablespoons finely chopped cucumber
3/4 cup lain yogurt
1 teaspoon dried mint -- finely crumbled
Salt and freshly ground pepper to taste
2 tablespoons finely chopped fresh cilantro leaves

Soak the bulghur in warm water for 15 minutes, then put in a strainer and press out all excess water.

Combine all ingredients except cilantro; place on a serving platter.
Chill; then decorate with the cilantro and serve.
