My understanding of NET CARBS is when they take the total carb count and
minus out things like fiber and sugar alcohols, etc, that don't seem to
impact bg. This is why a high fiber pasta (whole wheat for example) has less
of an impact on bg readings.
If his numbers are that high, I'm guessing he is on some sort of meds for
it, or I would hope so.
I know about being Italian (I am) and my mom lives in Italy and is diabetic.
She has found that when she eats pasta it must be a small portion. Here in
the US you could try Dreamfields Pasta (google it), it has helped me keep my
bg in check when I get the pasta urge.
Beans are very good as a complex carb, so "pasta e fagioli" soup for example
is an excellent choice for bg.
Pizza is hard. When I order it out, I make sure to ask for a "very thin
crust" and ask for veggie toppings (fiber!). Or you can get lo carb Mission
tortillas, toast them in the broiler and make your own. If I'm really in the
mood, I'll make a crustless pizza. I take a pie plate or shallow dish, line
it with mozzarella, sausage slices, pepperoni slices and low carb tomato
sauce. pop it in the oven and yum! All low carb.
Buon Appetito!
