Obviously with an event like Thanksgiving, whatever is made is usually
made for a large group. So whatever you make has to be something
everyone will want. A couple of the biggest offenders carbwise are the
mashed potatoes and the stuffing.
With the mashed potatoes, whatever your usual recipe is, add cooked
cauliflower to it (about 50/50 cauliflower/
that for years and I don't think my kids have caught on yet, LOL!!! I
made this last Thanksgiving and my mom and sister wanted to know how I
did it!
There are a number of different stuffing recipes. If your family
insists on the traditional bread stuffing, choose a very high fiber, low
carb bread. Then double the amount of onions and celery the recipe
calls for which can lower the amount of bread you use.
And, of course, pumpkin pie is usually required. The pumpkin itself is
pretty good for you. Whatever recipe you usually use, even the one on
the back of the can, use whatever sugar substitute works best for you.
If you can, make enough pie mix that aside from the pies, you can pour
some in cupcake tins so you can cook them for yourself without the
crust. As for whipping cream, just buy the liquid 'whipping' cream in a
carton and make your own. Just add a bit of vanilla and your favorite
sugar substitute.
