[Healthy_Recipes_For_Diabetic_Friends] Re: Hi Fiber Diet - nopales with chorizo

 

Another good way to fix nopales esp. for breakfast:

Cube/dice a fresh prepared paddle of nopal, sauté in a pan (spray with oil),
and add a little chopped onion if you wish. After a couple of minutes add
soyrizo – a vegetarian chorizo which I prefer over the original deal (a
Mexican sausage). Saute in skillet until hot or cooked in the case of the
meat one. This is delicious rolled in a corn tortilla or just stand alone
for breakfast. Feel free to add an egg to the mix for more go power.
Garnish with cilantro or salsa to your taste. Don't know gram of carbs but
it is low. Now I better go make breakfast!
