                         Pimento and Salami Sauce

--------  ------------  --------------------------------
     1/4           cup  olive oil -- warmed
  2             ounces  pimento paste -- or pimentos, (1 jar) minced
  3             ounces  salami -- diced
  20             large  salted capers -- soaked in water and drained
                        To serve: cooked pasta to serve 4 people

Toss pasta in the oil and add pimento paste or minced pimentos and salami.

Toss again and serve sprinkled with capers.

Makes 4 servings.

Pimento paste is available in gourmet shops and Italian grocers. It is made from sweet peppers and is not at all hot. If you cannot find it, substitute minced pimentos. Serve this dish with a salad of lettuce and watercress.
