Whipped Feta and Walnut Spread

4 ounces cream cheese -- (1/2 8-oz package) softened
8 ounces feta cheese -- crumbled
2 tablespoons extra virgin olive oil
1/4 cup chopped walnuts

BEAT cream cheese, feta cheese and oil with electric mixer on high speed until well blended.

STIR in walnuts.

SERVE with assorted crackers.

Makes 1 2/3 cups or 13 two-tablespoon servings.

ChupaNote: Try it plain the first time, the try adding 1/2 T. dried mint and 1/2 T. cracked black pepper.
