Radish and Orange Salad * - 16g Carbs, 3g Fiber

***DRESSING*
1/4 cup orange juice
1 tablespoon canola oil
1 tablespoon red wine vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
pinch salt
pinch cumin
***SALAD***
1 head romaine lettuce -- torn in small pieces
6 ounces radishes -- chopped
2 cups mandarin oranges in water
1/4 cup red onion -- finely chopped
1/4 cup orange juice
1 tablespoon vegetable oil
To prepare dressing: In a small bowl, combine orange juice, oil,
vinegar, mustard, honey, salt and cumin until blended; set aside.
Chop radishes. tear lettuce. Chop red onion. Drain and measure mandarin oranges. Place all ingredients together in medium bowl
and gently toss.
Add dressing just before serving.
