Greek Sauce

1 small onion -- or 6 green onions, trimmed and coarsely chopped
3 tablespoons olive oil
4 tomatoes -- seeded and chopped
1 small cucumber -- diced
20 black olives -- pitted
2 sprigs fresh marjoram -- chopped
2 sprigs fresh thyme -- leaves only, chopped or 1/2 t. dried thyme
freshly ground black pepper
juice of 1/2 lemon
1/4 pound feta cheese -- cubed
To serve: cooked pasta to serve 4 people
Saute onion or green onions in the oil for 1 minute. Add tomatoes, cucumber, olives, herbs and black pepper. Toss together over heat for another minute to warm through.
Add lemon juice and bring to a boil. Stir in cheese and cooked pasta. Toss and serve with more black pepper.
Makes 4 servings.
VARIATION:
Instead of feta, try coarsely grated Halloumi cheese. The texture will not be quite as creamy, but the flavor is good.
The topping was inspired by the delicious salads served at every meal in Athens and throughout the Greek islands. The robust and fragrant flavors go well with tubular pasta. The secret is not to
overcook the vegetables.
