Greek Coleslaw

1 pound coleslaw mix
1/4 cup shredded carrots
1/4 cup shredded red cabbage
1/4 cup shredded red bell pepper -- about 1/2 large red bell pepper, grilled and peeled
1/4 cup chopped fresh oregano -- leaves finely chopped, preferably Greek
1/4 cup chopped fresh thyme leaves -- finely chopped
1/4 cup chopped fresh mint -- finely chopped
1/2 cup pitted Kalamata olives -- chopped
1/2 cup feta cheese -- crumbled
2 tablespoons capers -- drained
2 tablespoons extra virgin olive oil
3 tablespoons freshly squeezed lemon juice
salt and freshly ground pepper to taste
Whisk olive oil into lemon juice into one tablespoon at a time.
Fold together all ingredients and gently toss with lemon juice/olive oil dressing.
Makes 8 servings
ChupaNote: I like 1/2 t. prepared roasted minced garlic in the lemon juice/olive oil mix. Also add a pinch of cayenne pepper and a pinch of white pepper. This needs very little salt, between the feta and the Kalamata olives.
