Yeah, you don't want to say anything about epilepsy until you get hired. After you are hired, wait at least a week, and then tell your employer. Discuss this issue in a professional manner. Sit down (possibly in an office), and let him/her know what epilepsy is and what to do if/when you have a seizure. Document when and what you told him/her.

Nancy, if you live in the US, it is covered under the Americans with Disibilities Act. They can not use that as a reason to not hire you.
